sweet potatoes

First, an explanation of the the title: I have celiac disease. What that basically boils down to is I can't eat gluten. So not wheat, barley, rye, or oats. I used to hate that but recently I've started cooking and exploring and I'm starting to get okay with it. I know there are lots of celiacs out there and there are also some wonderful blogs for them (this one is my favorite and kind of an inspiration for me to start this blog)but I figured that since food is one of my passions, I'd try my hand at this gf food blogging thing. The reason I chose the title gluten free yum is that after eighteen years of gf living (I've celiac disease since the ripe old age of twenty-two months), I'm done with food that's not delicious. No more crumbly, cardboard bread and gummy pasta. No more cookies that turn into dust when I bite into them. And no more food as the enemy. Basically, I want to share the yummy gf foods that exist for everyone and to share my realization that I actually enjoy cooking and that cooking gf isn't really hard.

Anyway, here's some food to start this thing off:

I love sweet potatoes. I also love home fries- a little spicy, a little greasy, and tasting just like comfort food should. So when I saw a sweet potato sitting on the counter I had to try this out. And believe me, it's wonderful.

Enough sweet potato to almost cover the bottom of your favorite skillet
Oil
Salt and pepper (I use white pepper)

Cut sweet potatoes into pieces all about the same size. Not tiny but not very big either.
Cover bottom of pan with oil and heat to medium high heat.
Fry potatoes, moving them around the pan the whole time so they don't burn.
When brown and soft, remove from pan to paper towels. Soak up excess oil. Cover with salt and pepper. Eat.

Or put them in between two corn tortillas and some cheddar-jack cheese and make quesodillas.
